The story behind the name

A Sweet Story from the Heart of County Tyrone

Catherine Finnegan’s meringues are so light and airy that they gave the business its name. The Fluffy Meringue is still the simplest way to describe what comes out of her ovens.

The bakery grew out of the family farm itself. When The Irish News visited in 2019, it reported that Catherine had started the business to add to the farm’s income, baking at home on the Finnegan farm in Clogher.

By 2019 she was baking in three ovens at home, turning out around a thousand meringues a day in eight flavours. Those figures are from 2019 and give a sense of how much the business had grown.

Today Food NI features The Fluffy Meringue in its directory of Northern Ireland producers as a small farmhouse artisan bakery. Its meringues are sold in boxes or one at a time, at food festivals across Ireland and from the bakery on the farm.

Meet the maker

Meet Catherine Finnegan

Catherine Finnegan is the baker behind The Fluffy Meringue. Her bakery sits on the family farm in Clogher, where the Finnegans have long farmed beef cattle and grown Christmas trees.

Meringues are the heart of the business. Catherine bakes them in her farmhouse bakery and has taken them to farmers’ markets and food events across Northern Ireland and beyond, selling them by the box to take home or one at a time to enjoy on the spot.

The bakery makes more than meringues. The Irish News noted Catherine’s millionaire’s shortbread in 2019, and today The Fluffy Meringue’s festive range includes a Luxury Christmas Pudding.

Rooted in the family farm

A Family Farm with a Sweet Side

The Fluffy Meringue is baked on a working farm. The Finnegans are beef farmers in Clogher, County Tyrone, and they also grow Christmas trees, sold today as Finnegan Christmas Trees.

When The Irish News visited in 2019, it found Catherine baking at home on the farm, while her husband, Patrick, delivered her meringues and felled the Christmas trees.

It makes for a farm with Christmas running right through it: trees growing in the fields, fir for our handmade wreaths, and meringues and festive treats from the bakery.

The flavours that made the name

Beautiful Meringues, Wonderful Flavours

Food NI calls them “heavenly, cloud-like sweet treats from Tyrone”. Over the years, the flavour list has read like a dessert menu.

A selection from The Fluffy Meringue’s range; Food NI’s producer profile lists nine flavours in all. The range changes, so treat these as a taste of the bakery’s story rather than a current menu.

  2. Salted Caramel

From the farm to food lovers

Sharing Something Special

Markets have long been part of the story. Food NI notes that the meringues have been sold at food festivals across Ireland, as well as from the bakery on the farm.

When The Irish News visited in 2019, Catherine was taking her stall to farmers’ markets in Monaghan, Waterford, Dingle and Donegal as well as across Northern Ireland, and her meringues were stocked at Sawers deli in Belfast. In March 2024, The Fluffy Meringue was among the stallholders at the first Taste Mid Ulster Market in Moy.

Markets and stockists change from year to year, so read this as a look back rather than a current list.
